Jaleo's new Executive Chef, John Borras, brings over three decades of culinary expertise to the restaurant. Originally from Venezuela, Borras was inspired by his Spanish father to pursue fine dining, leading to an impressive career that includes roles at Marriott Hotels and the Renaissance Hotel, as well as opening his own Spanish-inspired establishments. 

At Jaleo, Borras has introduced a refined menu that emphasizes approachable authenticity, with new lunch, dinner, and brunch offerings, as well as updates to the Sangría Hour menu. His culinary philosophy focuses on creating dishes that transport diners to Spain, while recent renovations, including a new lounge, patio, and enhanced interiors, further elevate the dining experience.
